Suflê de espinafre e cottage

O queijo cottage é saudável e até gostosinho, mas eu quase não encontro receitas para fazer com ele. Por  isso, quando vi num livro de culinária judaica esse suflê, logo tratei de experimentar:

1 pote (250g) de queijo cottage
1 maço de espinafre
3 ovos
1 colher (sobremesa) de farinha de trigo
sal e pimenta-do-reino a gosto

Lavar o espinafre e cozinhar em água e sal. Escorrer e picar com a faca. Misturar com o cottage e as gemas. Adicionar a farinha de trigo. Bater as claras em neve e juntar à mistura com cuidado. Acertar o sal e a pimenta e levar ao forno.
